Cinnamon Chip Cookies

How about just a simple and delicious cookie? :) That you need in your life asap.

I really don't have much to say about these. I'm sleepy and watching "Band of Brothers" in the process of posting this, so my mind is elsewhere. I'm mostly posting this, right now, because my mama asked me for the recipe :)

Cinnamon Chip Snickerdoodles

2 1/2 cups flour
2 tsp ground cinnamon
1 tsp baking soda
1/2 tsp salt
1/2 tsp baking powder
1 cup butter softened
1 cup granulated sugar
1/2 cup packed brown sugar
2 eggs
1 tsp vanilla
1 cup cinnamon flavor baking pieces
1 cup white baking pieces
1/2 cup coarsely crushed graham crackers (5 squares)

1/4 cup granulated sugar
1 tsp ground cinnamon

1. Preheat oven to 350. In a medium bowl combine flour, the 2 tsp cinnamon, baking soda, salt, and baking powder.
2. In a large bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add the 1 cup granulated sugar and the brown sugar. Beat until combined, scraping the bowl occasionally. Beat in eggs and vanilla until combined. Beat in as much of the flour mixture as you can with the mixer. Stir in any remaining flour mixture, the cinnamon pieces, white baking pieces, and graham crackers.
3. In a small bowl combine the 1/4 cup granulated sugar and the 1 tsp cinnamon.
4. Shape dough into 1 inch balls. Roll balls in sugar mixture to coat. Place balls 2 inches apart on ungreased cookie sheets.
5. Bake in preheated oven for 9 to11 minutes or until bottoms are light brown. Transfer cookies to wire rack to cool completely.

That right there is yummy waiting to happen (I used cinnamon graham crackers and they were perfect for this, just FYI).


The dough for these is very soft. Usually, I will mush the dough balls down a little, before putting in the oven, to help them spread while baking, but these don't need that at all.


I mean look at all of those chips!


Also, in case you actually have any left and want to save them, they freeze really well :)
