I'm going to share with you one of my most favorite cookies ever! These are really good for sending in a care package because it makes a lot and they stay fresh for awhile. I sent them to Mike a couple of weeks ago at AIT and I'll be sending these to him this week as well. He said they tasted so moist and good when he got them, and it was about a week after I had sent them!
*Side note: This is the LAST care package I'm sending to Mike at AIT because HE IS ALMOST DONE!!!
These are a lot like Mexican Wedding Cookies, but made with chocolate chips and without nuts, which I have said before I typically do not like in cookies. So without further ado, here they are, Snowball Cookies!!!
Mini Chip Snowball Cookies
1 1/2 cups (3 cups) butter or margarine, softened
3/4 cup powdered sugar
1 TB vanilla
1/2 tsp salt
3 cups all-purpose flour
2 cups (12 oz package) semi-sweet mini morsels
Optional: 1/2 cup chopped nuts (if you like that kind of thing....bleh....), additional powdered sugar
Beat butter, 3/4 cup powdered sugar, vanilla and salt in large mixer bowl until creamy. Gradually beat in flour. Stir in morsels (and nuts if you're having those). Shape level tablespoonfuls of dough into 1 inch balls. Place on ungreased baking sheets.
Bake at 375 for 10-12 minutes or until cookies are set and lightly browned. Remove from oven. Sift sugar over hot cookies on baking sheet. Let stand for 10 minutes (I only let mine stand for 4 to 5 minutes); remove to wire racks to cool completely. Sprinkle with additional sugar, if desired. Store in airtight containers. Makes about 5 dozen cookies.
Be sure and use a BIG bowl. 3 sticks of butter and 3 cups of flour takes up A LOT of space :) All of that butter makes these just melt in your mouth. Be sure and eat one while they're warm!! YUM!
These cookies will spread...nowhere. I fit 6 rows of 4 on one sheet!
This is what they look like done, basically what they look like raw. You'll have to touch them to tell if they're really done. They'll feel set, and if you look at the bottom of one it should be light brown.
I didn't put powdered sugar on these since they'll be going into a box. I also don't think Mike and his buddies want to worry about getting powdered sugar all over their uniforms...
