Just Some Cookies

Oh my, I will be so relieved when my classes are over for the semester and I have the summer off! Sorry for the late update this week.


My project this week was just trying some new cookie recipes. I had an Irish dancing competition in Dallas on Saturday, so I didn't have a lot of time to try something incredibly difficult. I've been wanting to try both of these recipes for awhile though and I'm glad I finally did because I found a recipe I love and one that will go in the trash :)

Chocolate-Toffee Cookies

2 1/3 cups flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1 cup unsalted butter, softened
1 cup packed brown sugar
1/2 cup granulated sugar
1 egg
2 teaspoons vanilla extract
1 cup semisweet chocolate chips
1 bag (8 oz) chopped milk chocolate toffee pieces (like Heath Bar baking pieces)
1. Heat oven to 375. Spray cookie sheets.
2. Stir together flour, baking soda and salt in a medium-size bowl; set aside.
3. In a large bowl, beat together butter and both sugars until light and fluffy, about 3 minutes. Beat in egg and vanilla.
4. On low speed, gradually add in flour mixture. Beat for 2 minutes or until blended. Stir in chocolate chips and toffee pieces.
5. Drop batter by tablespoonfuls onto prepared baking sheets and bake for 12 minutes or until golden. Cool baking sheets on wire racks for 5 minutes. Transfer cookies to wire rack to cool completely.
These are SO yummy!!!!!
These on the other hand....
...turned out nothing like the recipe said they would. I'm not even going to post the recipe. Bleh.
So, for now, the "experimental" aspect of my blog is going on the backburner and this will become more of a "I like to bake, check out these recipes that I love" blog. Someday, there are some bizarre and complicated recipes I'd like to try, but just not at this time :) Don't even worry, I'm still baking and I'm still sharing with anyone reading this!
