A Possibly Useful Tip

When I got married, one of the gifts my mom gave me was a notebook filled with some of my favorite cookie recipes. It's still one of my all-time favorite presents to date.

One of the recipes in it is helpful in a pinch when you need to whip up dessert really fast or just found out you need 4 dozen cookies 5 minutes ago. Or...you just want to eat some cookies :)
These will literally take less than 5 minutes to mix, and doubling or tripling the batch is so easy to do. Get Excited.


Cake Mix Cookies
Yields: about 32 cookies

1 cake mix - any flavor
1/2 cup vegetable oil
2 eggs
1/4 to 1/2 cup chips, nuts, raisins, etc.

Mix all together. Drop by spoonfuls on ungreased cookie sheet. Bake at 350 for 9 minutes. Remove from cookie sheet to cool.


You can do a couple variations if you'd like:
1. For chocolate crackle cookies, use a Devil's Food cake mix and roll the dough in powdered sugar before baking.
2. For German Chocolate cookies, use 1 German Chocolate cake mix, add 1 cup chocolate chips, and 1 tsp vanilla.

My mom and I think it would be yummy to try a lemon cake mix rolled in powdered sugar for lemon crackle cookies.
